I turned to my favorite southern cook, once again to help me figure out exactly what to do with the okra we received on Saturday. I cooked this dish for my parents and my family. The men folk; excluding my 1 year old who gobbles everything up, thought this dish was more of a side dish and struggled eating an entire plate. The women; excluding my 3 year old who gets pickier with each day, loved it and wishes there were more leftovers for today. Maybe next time I will make it as a side dish, leaving out the chicken and serving it with a barbecued steak or piece of chicken. Now I bet that would make the men folk happy!!
The Lady (Paula Deen) and Sons Okra and Tomatoes
**I did make a few modifications, so this isn't exactly how she cooks it
Ingredients
*4 slices bacon, cut into small pieces
*1 chicken breast, cut into small pieces
*1 small onion, diced
*1/2 large red bell pepper, diced
*2 cloves garlic, minced
*4 C fresh tomatoes
*1/4 C chicken broth
*1/2 t seasoned salt
*1/4 t garlic powder
*1 C water
*4 C okra; washed and cut into pieces
*salt and pepper to taste
*Rice (We used Trader Joe's Harvest Grain Mix--if you live near TJs, I recommend this L.O.T.S!!!) I no longer live near TJs, but stocked up and already have arrangements for an aunt to send me shipments. :)
Cook bacon slightly. (I didn't do this step, and regretted it because my bacon never got crispy.) Add chicken. Saute onion, bell pepper, and garlic with the chicken and bacon until tender. Add tomatoes, chicken broth, seasonings, water, and okra. Bring to a boil. Reduce heat and simmer, stirring occasionally for 25 minutes. Serve over rice or heavenly TJs harvest grains.
