So, now that breakfast is all taken care of (your muffins are in the oven baking as we speak, right?) let's think about lunch. (I'm a planner, can you tell?!?!?)
Quesadillas are a go-to meal at our house. Any time we're not sure what to make for lunch or dinner, quesadillas it is. Well this recipe is a great way to jazz up those quesadillas and make them a bit less ordinary and everyday. Not to mention, they are so yummy! Oh, and the recipe is from Pioneer Woman. So that in and of its self is a guarantee that it's delightful.

P.S. This recipe also includes a great tutorial on how to cut your pineapple!
P.P.S. I've made these with canned chicken before when we were in a real hurry. I don't care for store bought canned chicken all that well, but with the barbecue sauce it is okay.
