Oven Roasted PARSNIPS (aka: french fries)

I hope this post isn't too late. Do any of you still have your PARSNIPS left and don't know what to do with them? Well, just in case...here you go.

We had french fries for dinner the other night.  But guess what? They weren't french fries as we usually know them. They were PARSNIP french fries! My kids had no idea AND they loved them! (All except one, who was a little skeptical. But he doesn't like potatoes anyway, so he was pre-biased!)

This recipe was sent in by a reader, Michelle, and we sure appreciate it! I wasn't sure what I was going to do with my PARSNIPS until Michelle e-mailed and then I knew I had to try these and I'm glad I did. Thank you Michelle.

Oven Roasted Parsnips

Ingredients:

  • 1 1/2 lbs parsnips, peeled and julienned
  • 3 tablespoons olive oil
  • 2 pinches cayenne pepper (to taste)
  • 1/4 teaspoon sea salt (or more, to taste)
  • 2 cloves garlic, peeled and minced

Directions:

  1. Preheat oven to 450-degrees.
  2. Layer parsnips on baking sheet in single layer.
  3. Sprinkle with next three ingredients, tossing well to ensure everything is coated well.
  4. Roast 15 minutes on bottom rack, stirring occasionally.
  5. Sprinkle with the garlic and roast until well browned, about 15 minutes longer.
  6. Let cool slightly, adjust salt if necessary and serve.
*Instead of the cayenne and garlic we used Johnny's Season Salt which is a family favorite around here.

Last week I threw mine in with my pork roast and Old Bay seasoning. Frist time I have ever had them and I am hooked! I hope we get more this winter!

ok, it is still SO bizarre to me that connor doesn't like potatoes. is he really a boy? kendon's son? and a south-eastern idaho resident?

My beautiful wife replaced potatoes with the parsnips in a corn chowder that she made and it was great. We loved these little critters...let's hope we get some more in our BB's sometime soon.
