Lemon Garlic Chicken--Crockpot Style
When we receive lemons all I ever want to make is lemon bars, but I can't let myself do that, so I use them to flavor my sparkly water (yum)!! This week I decided to try to find something else I could do with the lemons. I found a recipe on allrecipes that I based this on. I really loved that it was a crockpot recipe. I couldn't live without that tool in my kitchen.
LEMON GARLIC CHICKEN
**In a saucepan combine the following and simmer for 3-4 minutes
1 cup chicken broth
4 T butter
The juice from 1 1/2 large lemons (about 6 T)
2 t oregano
salt to taste
1/2 t pepper
4 garlic cloves, minced
**Place 3 large chicken breasts in the bottom of the crockpot and cover with sliced mushrooms (to taste--I used 8). Pour the lemon mixture over the top of the chicken and mushrooms.
**Cook on low for 5 hours. (My chicken breasts were a little frozen in the middle) I rotated my chicken a couple of times while it cooked.
When the chicken was done cooking, I shredded it and we ate it over grains.
The chicken had an awesome flavor and we enjoyed it, but shredding it and eating it over the grains was the wrong thing to do. It didn't have very much sauce and so it seemed weird to eat it like that. After eating it we decided we should make it again, but next time we'll just eat the chicken breats whole with a side of grains or potato.

I made this for my family. I doubled the sauce and added chopped fresh rosemary. We served the chicken breasts whole with rice. It was fantastic! Everyone loved it. It was even better the next day.
